Dark Chocolate
1 cup (170g) dark chocolate chips (Non dairy & Refined Sugar Free)
1 tablespoon coconut oil
Berry Filling
1/2 cup fresh or frozen mixed berries (e.g., blueberries, raspberries, strawberries)
1 tablespoon honey or Agave/maple syrup (optional, for added sweetness)
1 teaspoon lemon juice (optional, to enhance flavor)
Optional Garnish
Fresh mint leaves
Additional berries
Instructions
1. Prepare the Berry Filling: If using fresh berries, wash and pat dry. If using frozen berries, thaw and drain them. In a small bowl, mash the berries lightly with a fork. If desired, add honey or maple syrup and lemon juice to sweeten and enhance the flavor. Mix well.
2. Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each interval until the chocolate is fully melted and smooth.
3. Prepare the Cups: Line a muffin tin with cupcake liners. Spoon a small amount of melted chocolate into the bottom of each liner. Use the back of a spoon or a small brush to spread the chocolate up the sides of the liner, creating a thin layer.
4. Add the Berry Filling: Spoon a small amount of the berry mixture into the center of each chocolate-coated liner.
5. Top with Chocolate: Pour additional melted chocolate over the berries to cover them completely. Smooth the top with the back of a spoon.
6. Chill and Set: Refrigerate the cups for at least 1 hour, or until the chocolate is set.
7. Garnish and Serve: If desired, garnish with fresh mint leaves or additional berries before serving.
