Ingredients
1 cup medjool dates (pitted)
1/2 cup raw cacao powder
1/2 cup almond/coconut/oat flour
1/4 cup coconut oil (melted)
1 teaspoon vanilla extract
Pinch of sea salt
Optional: unsweetened shredded coconut, cacao nibs, or chopped nuts for rolling
Instructions
1. Prepare the dates: If the dates are not soft, soak them in warm water for about 10 minutes and then drain well.
2. Blend the dates: In a food processor, blend the pitted dates until they form a thick paste.
3. Add other ingredients: Add the raw cacao powder, almond flour, melted coconut oil, vanilla extract, and sea salt to the food processor. Blend until the mixture is well combined and smooth.
4. Form the truffles: Scoop out small portions of the mixture and roll them into balls using your hands. If the mixture is too sticky, you can chill it in the refrigerator for about 10 minutes to make it easier to handle.
5. Coat the truffles: Roll the truffles in your desired coating, such as unsweetened shredded coconut, cacao nibs, or chopped nuts.
6. Chill: Place the truffles on a baking sheet lined with parchment paper and chill them in the refrigerator for about 30 minutes to firm up.
7. Store: Store the truffles in an airtight container in the refrigerator for up to a week.
