1 cup fresh or frozen blueberries
1 cup dark chocolate chips (dairy-free & refined sugar-free)
1 tablespoon coconut oil
Instructions
1. Prepare the blueberries: If using frozen blueberries, let them thaw and drain any excess liquid.
2. Melt the chocolate and coconut oil: Place the dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 20-30 second intervals, stirring in between, until fully melted and smooth. Alternatively, you can melt the chocolate and coconut oil using a double boiler.
3. Combine the ingredients: Gently fold the blueberrie
4. Combine the ingredients: Gently fold the blueberries into the melted chocolate mixture until they are well coated.
5. Form the clusters: Use a tablespoon or small scoop to drop clusters of the mixture onto a baking sheet lined with parchment paper. Press them together slightly to help them hold their shape.
6. Chill: Place the baking sheet in the refrigerator for about 30 minutes or until the clusters are firm and the chocolate has set.
7. Store: Store the clusters in an airtight container in the refrigerator for up to a week.
