2 tablespoons ground cinnamon
1/4 cup dark chocolate chips (non dairy & refined sugar free)
2 tablespoons coconut oil (softened)
For the Glaze (optional):
1/2 cup powdered coconut sugar (blend coconut sugar until powdered)
1 tablespoon almond milk (or any other plant-based milk)
1/2 teaspoon vanilla extract
Instructions
1. Prepare the Dough: Preheat your oven to 350°F (175°C). In a large bowl, mix together the gluten-free flour, coconut flour, coconut sugar, baking powder, and salt. In another bowl, whisk together the melted coconut oil, almond milk, and flax eggs. Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms. It should be slightly sticky but manageable.
2. Roll Out the Dough: Place the dough between two sheets of parchment paper and roll it out into a rectangle about 1/4 inch thick.
3. Prepare the Filling: In a small bowl, mix together the coconut sugar, cinnamon, and dark chocolate chips. Spread the softened coconut oil evenly over the rolled-out dough. Sprinkle the cinnamon-sugar mixture evenly over the dough.
4. Roll and Slice: Carefully roll the dough into a tight log, using the parchment paper to help you roll it evenly. Slice the rolled dough into about 12 even pieces.
5. Bake: Place the sliced rolls into a greased or parchment-lined baking dish. Bake for 20-25 minutes, or until the rolls are golden brown and cooked through.
6. Prepare the Glaze (optional): While the rolls are baking, whisk together the powdered coconut sugar, almond milk, and vanilla extract until smooth. Drizzle the glaze over the warm rolls once they are out of the oven.
7. Serve: Let the rolls cool slightly before serving.
